Tex-Mex is a fusion cuisine that is often misunderstood in Australia as "inauthentic" Mexican food. It's not that at all! Tex Mex is heavily influenced by it's intertwined history with Mexican cuisine. However, it is just as much Native American and Southern food, containing well-documented traditional dishes that were never Mexican at all. Examples of what people call "Mexican food" that are really Tex-Mex include nachos, fajitas, chili con carne, chimichangas and more.
