Seabass ceviche with ají Amarillo & passion fruit

40 day Dry aged Hereford Cote de boeuf Sharing Board, served with 3 Latin inspired sides:
Chargrilled baby gem with chipotle emulsion
Corn ribs with Aztec seasoning & a Tomatillo sauce
Potatoes - smoked bone marrow compound butter
& chimichurri sauce

Whole seabass served with:
Salsa tatemeda
Salsa Verde cruda
