STARTER:

Pulled Beef Taco - Pickled shallots - Fermented habanero - guasacasa
Vegetarian: Pulled Jackfruit Taco
MAIN
Nickolas’ signature dish which got him rave reviews from all judges including Michelin chef Anna Haugh;
Fillet of beef - Poblano & corn velouté - chimichurri - haucatay oil - porcini dust
Vegetarian: Roasted Cauliflower Steak
DESSERT
A French classic, showing some versatility to the judges delicate layers of pastry with a rich crème filling;
Raspberry Mille-fuelle - Pistachio crème pâtissière - vanilla crème pâtissière - rose & raspberry coulis
